Winter Update
IN THE WINERY
From the outside it can seem as though Winter is the time we kick back, sip on wines and relax. Far from it, the reality is, we’re still busy blending, bottling and planning for the next season.
Our 2024 whites are now ready for bottle. Starting with unoaked styles such as Semillon, Verdelho & Rose. We like to get these into bottle as soon as possible to capture their purity & beautiful fruit vibrancy. These wines will be released shortly with 2024 Verdelho available now. Our Chardonnay will take longer, spending time in a mix of new & old oak, with bottling in Summer.
In between tending our 2024 reds, Michael is also blending and preparing our 2023 reds for bottling. The first of these to be bottled will be our brand new 2023 Chambourcin. An exciting addition to our range, Michael is busy making the last adjustments to this still wine in readiness for it's release in October. Chambourcin is a rich full bodied red with a palate packed with loads of mulberry, blackberry fruits & spice, finishing with lovely soft tannins. We can’t wait to share it with you later this year.
CELLAR DOOR
It's been lovely welcoming our members & cellar door visitors over the last few months. We've had fun with Pottery & Wine classes, resulting in some very talented potters making beautiful, small bowls & plates, with more classes booked a little later in the year. For those that haven't joined us we are lucky to have Hunter Valley Ceramics partner with us for these classes offering a raft of tips, tricks & directive.
Our visitors have been asking us about chocolate & wine pairings, & if this really can be achieved so we've introduced a Wine & Chocolate Experience to our line up of experiences available in Cellar Door. Partnering with Hunter Valley Chocolate Company we've created perfect matches with their premium chocolates. Think Milk Chocolate Strawberries & Cream with Stomp! Rose, or White Chocolate Lime & Coconut with Stomp! Fiano. Next time you are in the Valley book an experience & let us know what you think.
